2 New Recipes

Well, since I've moved, there hasn't been much time for traveling.  Things are starting to settle down now, though, and this week I tried two new recipes that were amazing, so here goes:

1) Pumpkin Spice Pancakes
1/2 c canned pumpkin
1 1/4 c flour
2 T sugar
2 t baking powder
1/2 t salt
1 t cinnamon
1/2 t ginger
1 large egg
2 T butter
1 c milk
In a small bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and ginger.  In a lg bowl, whisk together egg, pumpkin, butter, and milk.  Fold dry ingredients into wet ingredients until just mixed.  In lg skillet over med heat, melt enough butter to coat bottom.  Add pancake batter, 1/4 c at a time, and cook until bubbles form on top.  Flip, and cook until golden.  Serve hot.

2)Classic Chicken Tetrazzini (I made some adjustments to this, they are in parentheses).
12 oz vermicelli (or linguini)
1/2 c butter
1/2 c flour
4 c milk
1/2 c white wine
2 T chicken boullion
1 t pepper
2 c grated cheese
4 c cooked chicken (or 4 cans tuna)
8 oz sliced mushrooms
Preheat oven to 350.  Prepare pasta according to pkg directions.  Melt butter in lg. saute pan over low heat; whisk in flour until smooth.  Cook 1 min, whisking constantly.  Gradually whisk in milk and wine; cook over med heat, whisking constantly, 8-10 min. or until mixture is thickened and bubbly.  Whisk in boullion granules, pepper, and 1 c cheese.  Remove from heat; stir in chicken (or tuna)d, mushrooms, and hot, cooked pasta.  Spoon mixture into a lightly greased 13 x 9" baking dish; sprinkle with remaining cheese.  Bake for 35 min or until bubbly
